Ingredients

  • 1/2 cup walnut halves
  • 1/3 cup mayonnaise
  • 1/3 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/4 tsp salt and a pinch of black pepper
  • 2 crisp apples (one red, one green), cored and diced
  • 2 ribs celery, thinly sliced
  • 1 cup red seedless grapes, halved
  • lettuce leaves, to serve

Steps

  1. Toast the walnuts in a dry skillet over medium heat, 4 to 5 minutes, then cool and chop coarsely.
  2. Whisk the mayonnaise, yogurt, lemon juice, honey, salt and pepper in a large bowl.
  3. Add the apples straight away and toss so the dressing keeps them from browning.
  4. Fold in the celery, grapes and most of the walnuts.
  5. Serve on lettuce leaves with the rest of the walnuts on top.

TipFreshest within a few hours. Add the walnuts at the end if you are making it ahead.
