Ingredients

  • 2 tbsp butter plus more for the bread
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 can (28 oz) whole tomatoes
  • 2 cups broth
  • 1 tsp sugar
  • 1/2 cup heavy cream
  • 8 slices sandwich bread
  • 8 slices cheddar or American cheese
  • Salt and pepper

Steps

  1. Melt the butter in a pot over medium. Cook the onion 6 minutes, then the garlic for 1 minute.
  2. Add the tomatoes, broth and sugar. Simmer 15 minutes.
  3. Blend until smooth, stir in the cream, and season.
  4. Butter one side of each bread slice. Build sandwiches with the butter outside.
  5. Cook in a skillet over medium-low, 3 to 4 minutes per side, until golden and melted. Cut and serve with the soup.

TipLow heat is the key to a grilled cheese that's crisp outside and melted inside.
