Ingredients

  • 1 unbaked 9-inch pie crust (homemade or store-bought)
  • 1 1/2 lb sweet potatoes (2 medium)
  • 1/2 cup (1 stick) butter, melted
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp salt

Steps

  1. Heat the oven to 400°F. Prick the sweet potatoes and roast on a lined tray until very soft, 50 to 60 minutes. Let cool, then peel. Lower the oven to 350°F.
  2. Fit the crust into a 9-inch pie plate and crimp the edge. Chill while you make the filling.
  3. Blend the sweet potato flesh with the melted butter until completely smooth. You should have about 2 cups.
  4. Add both sugars, the eggs, evaporated milk, vanilla, spices and salt and blend again until silky.
  5. Pour into the crust and bake 55 to 65 minutes, until the edges are set and the center jiggles only slightly.
  6. Cool on a rack at least 2 hours before slicing.

TipRoast the sweet potatoes a day ahead; the pie comes together in 10 minutes after that.
