Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic, grated
  • 1/2 cup grated Parmesan
  • 1 1/2 cups shredded mozzarella, divided
  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed very dry
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 1/4 tsp red pepper flakes
  • salt and black pepper
  • tortilla chips, crackers or toasted baguette, to serve

Steps

  1. Heat the oven to 375°F.
  2. Beat the cream cheese, sour cream, mayonnaise and garlic until smooth. Stir in the Parmesan and 1 cup of the mozzarella.
  3. Fold in the spinach, artichokes and pepper flakes. Season with a little salt and pepper.
  4. Spread in a small baking dish (about 1 1/2 quarts) and top with the remaining mozzarella.
  5. Bake 20 to 25 minutes, until bubbling and lightly browned. Serve hot with chips.

TipSqueeze the spinach in a clean towel until no more water comes out, or the dip turns watery.
