Ingredients

  • 1 1/2 lb large shrimp, peeled and deveined
  • 1/2 tsp salt and 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp butter, divided
  • 6 cloves garlic, thinly sliced
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine or chicken broth
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 cup chopped parsley
  • crusty bread or 12 oz cooked linguine, to serve

Steps

  1. Pat the shrimp dry and season with the salt and pepper.
  2. Heat the oil and 1 tbsp butter in a large skillet over medium-high heat. Add the shrimp in one layer and cook 1 minute per side, just until pink. Move to a plate.
  3. Lower the heat to medium and add 1 tbsp butter, the garlic and pepper flakes. Cook 1 minute, until the garlic is fragrant but not brown.
  4. Pour in the wine and simmer, scraping the pan, until reduced by half, 2 minutes.
  5. Stir in the remaining 2 tbsp butter, the lemon juice and zest. Return the shrimp and toss for 1 minute to heat through.
  6. Add the parsley and serve with bread for the sauce, or toss with hot linguine and a splash of pasta water.

TipTake the shrimp out while they're still a little translucent in the center; they finish cooking in the sauce.
