Ingredients

  • 1 lb smoked sausage or chicken sausage, sliced
  • 2 sweet potatoes, cubed
  • 1 lb Brussels sprouts, halved
  • 1 red onion, cut in wedges
  • 2 tbsp olive oil
  • 1 tsp each garlic powder and smoked paprika, 1/2 tsp salt
  • 1 tbsp maple syrup and 1 tbsp Dijon (optional glaze)

Steps

  1. Heat the oven to 425°F.
  2. Toss the sweet potatoes, sprouts and onion with oil and spices. Spread on a large sheet pan. Roast 15 minutes.
  3. Add the sausage, stir, and roast 15 minutes more until the vegetables are browned.
  4. Whisk the maple and Dijon and drizzle over the hot pan.

TipUse two pans if they're crowded. Space is what makes things brown.
