Ingredients

  • 1 1/2 lb Italian sausage links (sweet, hot or a mix)
  • 2 tbsp olive oil
  • 3 bell peppers (red, yellow and green), sliced
  • 1 large onion, sliced
  • 4 cloves garlic, sliced
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine or chicken broth
  • 1 cup crushed tomatoes
  • salt and black pepper
  • chopped basil or parsley
  • hoagie rolls or polenta, to serve

Steps

  1. Heat 1 tbsp oil in a large skillet over medium heat. Brown the sausages on all sides, about 10 minutes, then move to a plate. (They don't need to be cooked through yet.)
  2. Add the remaining oil, peppers and onion to the pan with a pinch of salt. Cook, stirring, until soft and browned in spots, 10 to 12 minutes.
  3. Add the garlic, oregano and pepper flakes for 1 minute, then pour in the wine and scrape up the browned bits.
  4. Stir in the tomatoes. Slice the sausages into thick pieces (or leave whole) and nestle them in.
  5. Cover and simmer 12 to 15 minutes, until the sausages reach 160°F and the sauce thickens.
  6. Season with salt and pepper, scatter with herbs, and serve on rolls or over polenta.

TipCut the peppers and onion into similar-width strips so they soften at the same rate.
