Ingredients

  • 1 1/2 lb ground beef (85% lean)
  • 1/3 cup plain dry breadcrumbs
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce, divided
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced (optional)
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Dijon mustard
  • chopped parsley, to serve
  • mashed potatoes and buttered corn, to serve

Steps

  1. In a bowl, mix the beef, breadcrumbs, egg, ketchup, 2 tsp Worcestershire, garlic powder, salt and pepper with your hands just until combined. Shape into 4 oval patties about 3/4 inch thick.
  2. Heat the oil in a large skillet over medium-high heat. Brown the patties 3 to 4 minutes per side (they finish cooking in the gravy). Move to a plate and pour off all but about 1 tbsp fat.
  3. Lower the heat to medium and add the butter, onion and mushrooms with a pinch of salt. Cook, stirring, until soft and golden, 8 to 10 minutes.
  4. Sprinkle in the flour and stir 1 minute. Slowly whisk in the broth, the remaining Worcestershire and the mustard, scraping up the browned bits.
  5. Bring the gravy to a simmer, return the patties and any juices, and spoon the gravy over them. Cover and simmer gently 10 to 12 minutes, until the patties reach 160°F in the center.
  6. Sprinkle with parsley and serve over mashed potatoes with corn on the side.

TipPress a shallow dimple into the center of each patty before browning so they cook flat instead of puffing into balls.
