Ingredients

  • 3 cups finely chopped napa cabbage
  • 1 tsp salt
  • 1 lb ground pork
  • 3 green onions, finely chopped
  • 1 tbsp grated ginger
  • 2 cloves garlic, grated
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 2 tsp sesame oil
  • 1/2 tsp white pepper
  • 40 round dumpling wrappers
  • 2 to 3 tbsp neutral oil
  • For the dipping sauce: 3 tbsp soy sauce
  • 2 tbsp black or rice vinegar
  • 1 tsp chili oil
  • a few slivers of ginger

Steps

  1. Toss the cabbage with the salt and leave 15 minutes. Squeeze out as much water as you can.
  2. Mix the cabbage with the pork, green onions, ginger, garlic, soy sauce, wine, sesame oil and white pepper, stirring in one direction until sticky.
  3. Put 1 heaping tsp filling in the center of a wrapper, wet the edge, fold in half and pleat one side to seal. Set on a floured tray. Repeat.
  4. Heat 1 tbsp oil in a nonstick skillet over medium-high heat. Arrange about 13 dumplings flat side down and fry until the bottoms are golden, 2 minutes.
  5. Pour in 1/3 cup water, cover immediately, and steam 6 minutes, until the water is gone and the filling is cooked. Uncover and fry 1 minute more to re-crisp.
  6. Repeat with the rest. Mix the dipping sauce and serve with the hot dumplings.

TipFreeze extras on a tray, then bag them; cook from frozen with an extra 2 minutes of steaming.
