Ingredients

  • 1 cup (2 sticks) butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups raisins

Steps

  1. Heat the oven to 350°F and line two sheet pans with parchment or silicone mats.
  2. Beat the butter and both sugars until light, about 2 minutes. Beat in the eggs and vanilla.
  3. Whisk the flour, baking soda, cinnamon and salt, then stir into the butter mixture. Stir in the oats and raisins.
  4. Drop rounded tablespoons of dough 3 inches apart; they spread.
  5. Bake 10 to 12 minutes, until golden at the edges but still soft in the center. Cool 5 minutes on the pan, then move to a rack.

TipFor chewier, thicker cookies, chill the dough for an hour before baking.
