Ingredients

  • 1 lb Italian sausage or ground beef
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 5 cups chicken broth
  • 2 tsp Italian seasoning
  • 8 lasagna noodles, broken into pieces
  • 3/4 cup ricotta
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • Fresh basil

Steps

  1. Brown the meat in a large pot over medium-high. Add the onion and cook 5 minutes, then the garlic and tomato paste for 1 minute.
  2. Add the tomatoes, broth and Italian seasoning. Bring to a boil.
  3. Add the noodle pieces and simmer, stirring often, 10 to 12 minutes until tender.
  4. Mix the ricotta, mozzarella and parmesan in a small bowl.
  5. Ladle the soup into bowls and top each with a big spoonful of the cheese mix and some basil.

TipThe noodles keep soaking up liquid, so add broth when reheating.
