Ingredients

  • 1 lb ground beef (or half beef, half lamb)
  • 1 small onion, grated and squeezed dry
  • 3 cloves garlic, minced
  • 1/2 cup finely chopped parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground allspice
  • 1/4 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bell peppers, cut in large pieces
  • 2 small tomatoes or 1 cup cherry tomatoes
  • 1 onion, cut in wedges
  • olive oil, for brushing
  • For the yogurt sauce: 1 cup plain yogurt, 1 small clove garlic grated, 1 tbsp lemon juice, pinch of salt
  • rice or flatbread, to serve

Steps

  1. Soak 8 wooden skewers in water 30 minutes (or use metal skewers).
  2. Mix the meat, grated onion, garlic, parsley, spices, salt and pepper thoroughly with your hands until sticky. Chill 15 minutes.
  3. Divide into 8 portions. Squeeze each around a skewer into a long, even sausage shape about 1 inch thick.
  4. Thread the peppers, tomatoes and onion on separate skewers and brush with oil. Heat a grill to medium-high and oil the grates.
  5. Grill the kofta, turning every 2 minutes, until browned and 160°F inside, 8 to 10 minutes. Grill the vegetables until charred and tender.
  6. Stir the sauce ingredients together and serve with the kebabs, vegetables and rice or flatbread.

TipWet your hands with cold water while shaping so the meat doesn't stick and the kofta stay smooth on the skewers.
