Ingredients

  • 12 medium jalapeños
  • 8 oz cream cheese, soft
  • 1 cup shredded sharp cheddar
  • 1/4 cup grated Parmesan
  • 2 green onions, finely sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 cup panko breadcrumbs mixed with 1 tsp melted butter (optional)

Steps

  1. Heat the oven to 400°F and line a baking sheet with a silicone mat or foil.
  2. Halve the jalapeños lengthwise and scrape out the seeds and ribs with a small spoon (wear gloves if your skin is sensitive).
  3. Mix the cream cheese, cheddar, Parmesan, green onions, garlic powder, paprika and salt until smooth.
  4. Fill each pepper half generously and set them cut side up on the sheet. Sprinkle with the buttered panko if you like a crunchy top.
  5. Bake 15 to 18 minutes, until the peppers are tender and the filling is bubbling and golden in spots. Cool 5 minutes before serving.

TipLeaving a little of the white rib in a few halves gives a mix of mild and spicy poppers on the platter.
