Ingredients

  • 12 oz spaghetti
  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried oregano, pinch of red pepper flakes
  • 1/2 cup grated parmesan
  • Fresh basil; salt

Steps

  1. Boil the spaghetti in salted water. Save 1/2 cup of the water, then drain.
  2. Brown the sausage in a large skillet over medium-high, breaking it up, 7 minutes. Add the onion for 4 minutes, then the garlic for 1 minute.
  3. Add the tomatoes, oregano and pepper flakes. Simmer 10 minutes.
  4. Toss the pasta with the sauce, parmesan and a splash of pasta water. Season with salt and top with basil.

TipA spoonful of ricotta on each plate makes it extra creamy.
