Ingredients

  • 1 bone-in, skin-on turkey breast (6 to 7 lb), thawed
  • 4 tbsp soft butter
  • 2 tsp kosher salt
  • 1 1/2 tsp coarsely cracked black pepper
  • 1 tbsp chopped fresh sage
  • 1 tbsp fresh thyme leaves
  • 1 tsp chopped fresh rosemary
  • 2 cloves garlic, grated
  • 1 onion, thickly sliced
  • 1 cup chicken broth

Steps

  1. Pat the turkey dry. If you have time, rub it with the salt and refrigerate uncovered overnight.
  2. Heat the oven to 375°F. Mash the butter with the pepper, herbs and garlic (and the salt if you did not dry-brine).
  3. Loosen the skin and rub some of the butter underneath, then spread the rest over the outside.
  4. Set the turkey on the onion slices in a roasting pan or rimmed sheet and pour the broth into the pan.
  5. Roast 1 1/4 to 1 3/4 hours, until the thickest part reads 160°F. Tent with foil if the skin browns too fast.
  6. Rest 20 minutes (it will climb to about 165°F), then carve across the grain and spoon the pan juices over.

TipUse the pan drippings and onion to start a quick gravy while the turkey rests.
