Ingredients

  • 6 medium Yukon Gold potatoes (about 2 1/2 lb), scrubbed
  • 4 tbsp butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, grated
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • a few sprigs of thyme or rosemary
  • flaky salt and chopped chives, to serve

Steps

  1. Heat the oven to 425°F. Set a potato between two chopsticks or wooden spoon handles and slice crosswise every 1/8 inch, stopping at the chopsticks so the base stays whole. Repeat with all.
  2. Mix the butter, oil, garlic, salt and pepper. Set the potatoes on a parchment-lined sheet pan with the herb sprigs and brush all over with half the mixture, letting some drip between the slices.
  3. Roast 30 minutes. The slices will start to open.
  4. Brush again with the remaining butter, working it between the slices, and roast 25 to 35 minutes more, until the edges are crisp and a knife slides easily into the center.
  5. Sprinkle with flaky salt and chives and serve.

TipRinse the cut potatoes under cold water and pat them dry before brushing; it removes surface starch so the slices fan out instead of sticking.
