Ingredients

  • 3 large ripe Hass avocados
  • 2 tbsp lime juice, plus more to taste
  • 1/4 cup finely chopped white onion, divided
  • 1 jalapeño, seeded and minced, divided
  • 1/4 cup chopped cilantro, divided
  • 3/4 tsp salt, divided
  • 1 ripe Roma tomato, seeded and diced
  • tortilla chips, to serve

Steps

  1. Halve and pit the avocados and scoop the flesh into a bowl. Add the lime juice and 1/2 tsp salt and mash with a fork, leaving it chunky.
  2. Fold in half the onion, half the jalapeño and half the cilantro. Taste and add more lime or salt.
  3. For the pico, toss the tomato with the remaining onion, jalapeño, cilantro and salt.
  4. Spoon the guacamole into a serving bowl, pile the pico in the center, and serve right away with chips.

TipRinse the chopped onion in a sieve under cold water to take the harsh edge off without losing its crunch.
