Ingredients

  • 1 1/2 lb fresh green beans, trimmed and halved
  • 3 tbsp butter
  • 8 oz mushrooms, chopped
  • 2 cloves garlic, minced
  • 3 tbsp flour
  • 1 cup chicken or vegetable broth
  • 1 cup milk
  • 1 tsp soy sauce; salt and pepper
  • 1 1/2 cups crispy fried onions

Steps

  1. Heat the oven to 375°F. Boil the beans in salted water 5 minutes, then drain and rinse with cold water.
  2. Melt the butter in a skillet and cook the mushrooms until browned, 6 minutes. Add the garlic for 1 minute.
  3. Stir in the flour, then slowly add the broth and milk. Simmer until thick, 3 minutes. Add the soy sauce, salt and pepper.
  4. Fold in the beans and half the onions. Spread in a baking dish.
  5. Bake 20 minutes, top with the rest of the onions, and bake 5 minutes more.

TipAssemble the day before without the onions. Add 10 minutes to the baking time.
