Ingredients

  • 2 lb carrots, peeled and cut into 3-inch sticks
  • 3/4 cup water
  • 2 tbsp butter
  • 2 tbsp honey or brown sugar
  • 1 tbsp finely grated fresh ginger
  • 1/2 tsp salt
  • 1 tsp lemon juice
  • black pepper and chopped parsley, to finish

Steps

  1. Put the carrots, water, butter, honey, ginger and salt in a large skillet in a single layer.
  2. Bring to a boil, cover and cook over medium heat until the carrots are just tender, 6 to 8 minutes.
  3. Uncover and keep cooking, shaking the pan, until the liquid has reduced to a glossy glaze that coats the carrots, 4 to 6 minutes.
  4. Stir in the lemon juice and season with pepper. Sprinkle with parsley.

TipCut the carrots the same thickness so they all finish together.
