Ingredients

  • 3 large eggs, at room temperature
  • 2/3 cup whole milk, at room temperature
  • 2/3 cup all-purpose flour
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 4 tbsp butter, divided
  • For the topping: 2 tbsp sugar mixed with 1 tsp ground cinnamon
  • lemon wedges (optional)

Steps

  1. Put a 10- or 12-inch cast-iron skillet in the oven and heat it to 425°F.
  2. Blend the eggs, milk, flour, sugar, salt and vanilla until smooth and frothy, about 20 seconds.
  3. Carefully take out the hot skillet, add 3 tbsp butter and swirl until melted and foaming. Pour in the batter all at once.
  4. Bake without opening the oven 18 to 20 minutes, until puffed and deep golden at the edges.
  5. Melt the last tablespoon of butter and brush it over the center, then sprinkle generously with the cinnamon sugar. Cut into wedges and serve right away, with lemon if you like.

TipIt falls as it cools, which is normal. Room-temperature eggs and milk give the tallest puff.
