Ingredients

  • 1 loaf Cuban bread (or a soft French loaf), cut into 4 pieces and split
  • 3 tbsp yellow mustard
  • 12 oz thinly sliced roast pork (leftover pork shoulder or loin)
  • 2 tbsp mojo or 1 tbsp orange juice mixed with 1 tbsp lime juice and a pinch of cumin
  • 8 oz thinly sliced deli ham
  • 8 slices Swiss cheese
  • dill pickle slices
  • 3 tbsp soft butter

Steps

  1. Toss the sliced pork with the mojo (or citrus mixture).
  2. Spread the cut sides of the bread with mustard. Layer the bottoms with Swiss, ham, pork, pickles and more Swiss, then close the sandwiches.
  3. Butter the outside of each sandwich lightly.
  4. Heat a large skillet over medium heat. Set the sandwiches in, put a heavy pan on top (weighted with a few cans if needed), and press.
  5. Cook 4 to 5 minutes per side, until the bread is flat and crisp and the cheese has melted. Cut on the diagonal and serve.

TipLow and slow is the way here: medium heat lets the cheese melt all the way through before the bread gets too dark.
