Ingredients

  • 3 large boneless skinless chicken breasts (about 2 lb)
  • 1 tsp salt and 1/2 tsp black pepper
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan, divided
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • 3 cups marinara sauce
  • 2 cups shredded low-moisture mozzarella
  • fresh basil, to serve
  • cooked spaghetti, to serve (optional)

Steps

  1. Heat the oven to 425°F. Slice each breast in half horizontally to make 6 thin cutlets and season with salt and pepper.
  2. Beat the eggs in one shallow bowl. In another, mix the breadcrumbs, 1/4 cup Parmesan and the garlic powder.
  3. Drizzle the oil into a 9x13 baking dish. Dip each cutlet in egg, then press into the crumbs, and lay it in the dish. Turn once to coat both sides with oil.
  4. Bake uncovered 15 minutes, until the crumbs start to brown.
  5. Spoon the marinara around and over the cutlets, then cover with the mozzarella and the remaining Parmesan.
  6. Bake 12 to 15 minutes more, until the cheese is bubbling and the chicken reads 165°F. Scatter with basil and serve with spaghetti if you like.

TipLeave a strip of crust uncovered by sauce on each cutlet if you want it to stay a little crisp.
