Ingredients

  • 2 tbsp butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 tbsp flour
  • 5 cups chicken broth
  • 1 cup half-and-half
  • 1 lb shelf-stable potato gnocchi
  • 3 cups cooked shredded chicken (a rotisserie chicken works)
  • 2 big handfuls baby spinach
  • 1 tsp dried thyme; salt and pepper to taste

Steps

  1. Melt the butter in a large pot over medium heat. Cook the onion, carrot and celery until soft, about 7 minutes. Add the garlic for 1 minute.
  2. Sprinkle in the flour and stir for 1 minute so it coats the vegetables.
  3. Slowly pour in the broth while stirring, then add the thyme. Bring to a simmer and cook 5 minutes until slightly thickened.
  4. Add the gnocchi and cook 3 to 4 minutes, until they float.
  5. Stir in the half-and-half, chicken and spinach. Heat through until the spinach wilts. Season with salt and pepper.

TipThe gnocchi soak up broth as it sits. Add a splash of broth when reheating.
