Ingredients

  • 2 boneless, skinless chicken breasts (about 1 1/4 lb)
  • 1 tsp salt, divided, plus more for the pasta water
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 12 oz fettuccine
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 1/2 cups finely grated Parmigiano-Reggiano, plus more to serve
  • pinch of nutmeg
  • chopped parsley, to serve
  • Caesar salad and garlic bread, to serve

Steps

  1. Cut the chicken into 3/4-inch pieces and season with 1/2 tsp salt, the pepper and garlic powder.
  2. Heat the oil in a large skillet over medium-high heat and cook the chicken in one layer, turning once, until golden and cooked through, 5 to 6 minutes. Move to a plate.
  3. Meanwhile, boil the fettuccine in salted water until al dente. Save 1 cup of the pasta water and drain.
  4. In the same skillet over medium heat, melt the butter and cook the garlic 30 seconds. Add the cream and simmer gently 3 to 4 minutes until slightly thickened.
  5. Take the pan off the heat and whisk in the cheese a handful at a time, then the nutmeg and remaining salt. Add the pasta and chicken and toss, adding pasta water a splash at a time until silky.
  6. Serve right away with parsley, extra cheese, and a Caesar salad and garlic bread on the side.

TipAdd the cheese off the heat; if the cream is boiling, Parmesan turns grainy and stringy instead of melting smoothly.
