Ingredients

  • For the sauce: 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 3 tbsp mild chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1/2 tsp salt
  • For the enchiladas: 3 cups shredded cooked chicken
  • 1/2 cup sour cream
  • 2 cups mixed shredded cheddar and Monterey Jack, divided
  • 1 (4 oz) can diced green chiles
  • 10 (8-inch) flour or corn tortillas, warmed
  • To serve: shredded lettuce, sour cream, guacamole, rice and refried beans

Steps

  1. Make the sauce: heat the oil in a skillet, whisk in the flour, chili powder, cumin, garlic powder and oregano, and cook 1 minute. Whisk in the tomato paste, broth and salt and simmer until slightly thickened, 5 minutes.
  2. Heat the oven to 375°F. Mix the chicken, sour cream, 1 cup cheese, the chiles and 1/2 cup of the sauce.
  3. Spread 1/2 cup sauce in a 9x13 dish. Fill each tortilla with about 1/3 cup chicken, roll up, and set seam side down in the dish.
  4. Pour the remaining sauce over and sprinkle with the rest of the cheese.
  5. Bake uncovered 20 to 25 minutes, until bubbling. Serve with lettuce, sour cream, guacamole, rice and beans.

TipA rotisserie chicken gives you about 3 cups of meat, which is exactly enough for one pan.
