Chicken thighs braised with peppers, mushrooms, onions and tomatoes in one skillet. It's Italian comfort food that's lighter than it tastes.

Ingredients

  • 6 bone-in chicken thighs
  • 1 tsp salt, 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 red and 1 green bell pepper, sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or broth
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried oregano, 1 sprig rosemary
  • Fresh basil or parsley

Steps

  1. Season the chicken. Brown it skin-side down in oil in a large skillet over medium-high, 6 minutes, then flip for 2 minutes. Set aside.
  2. Pour off all but 2 tbsp fat. Cook the onion, peppers and mushrooms 8 minutes, then the garlic for 1 minute.
  3. Add the wine and scrape the bottom, then the tomatoes and herbs.
  4. Nestle the chicken in skin-side up. Cover and simmer 25 to 30 minutes, until the chicken reaches 175°F.
  5. Top with fresh herbs. Serve over pasta, polenta or crusty bread.

TipRemove the skin before serving to make it lighter.
