Ingredients

  • 2 lb skirt or flank steak
  • For the marinade: 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 jalapeño, minced
  • 1/2 cup chopped cilantro
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • To serve: 2 white onions, cut in thick rounds
  • corn or flour tortillas, salsa, guacamole and lime wedges

Steps

  1. Whisk the marinade ingredients in a large bowl or zip-top bag. Add the steak, turn to coat, and refrigerate 2 to 8 hours.
  2. Heat a grill (or grill pan) to high. Brush the onion rounds with oil.
  3. Lift the steak out of the marinade and pat off excess. Grill 3 to 5 minutes per side for medium-rare (130°F), depending on thickness. Grill the onions until charred and tender.
  4. Rest the steak 5 to 10 minutes, then slice thinly across the grain.
  5. Serve with warm tortillas, grilled onions, salsa, guacamole and lime wedges.

TipDon't marinate longer than 8 hours; the citrus starts to make the meat mushy rather than tender.
