Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs
  • 3 tbsp melted butter, plus more for the pan
  • 1 tsp vanilla

Steps

  1. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
  2. In another bowl, whisk the buttermilk, eggs, melted butter and vanilla.
  3. Pour the wet into the dry and stir gently until just combined. Lumps are fine. Rest 5 minutes.
  4. Heat a skillet over medium and brush with butter. Pour 1/3 cup batter per pancake.
  5. Cook until bubbles form and the edges look set, about 2 minutes. Flip and cook 1 minute more.

TipNo buttermilk? Stir 2 tbsp lemon juice into 2 cups milk and let it sit 5 minutes.
