Ingredients

  • 1 baguette or rustic Italian loaf, sliced 1/2 inch thick on the diagonal
  • 4 tbsp extra-virgin olive oil, divided
  • 1 1/2 lb ripe tomatoes (Roma or mixed), seeded and diced
  • 1/3 cup fresh basil, thinly sliced
  • 1 small shallot, minced (optional)
  • 1 tsp balsamic or red wine vinegar
  • 1/2 tsp salt
  • black pepper
  • 1 large clove garlic, peeled and halved

Steps

  1. Toss the tomatoes with the basil, shallot, vinegar, salt, pepper and 2 tbsp olive oil. Let stand 10 minutes.
  2. Brush the bread lightly with the remaining oil and grill or broil until golden and crisp at the edges, 1 to 2 minutes per side.
  3. Rub each warm toast with the cut side of the garlic.
  4. Spoon the tomatoes onto the toasts just before serving, leaving most of the juices behind.

TipTop the toasts at the last minute; once the juices soak in, the bread loses its crunch.
