  • 3/4 cup (170 g) butter
  • 1 1/4 cups (250 g) sugar
  • 3/4 cup (65 g) cocoa powder
  • 1/2 tsp salt
  • 2 eggs plus 1 yolk, cold
  • 1 tsp vanilla
  • 1/2 cup (65 g) flour
  • 1 cup chopped dark chocolate

Steps

  1. Heat the oven to 350°F. Line an 8x8 or 9x9 pan with parchment.
  2. Melt the butter in a pan over medium, swirling, until it smells nutty and has brown bits, 5 to 7 minutes.
  3. Pour into a bowl and whisk in the sugar, cocoa and salt. Cool 5 minutes.
  4. Whisk in the eggs and yolk hard for 1 minute until glossy. Add the vanilla.
  5. Fold in the flour, then the chocolate. Spread in the pan.
  6. Bake 22 to 25 minutes, until a toothpick shows moist crumbs. Cool completely before cutting.

TipFor clean squares, chill the brownies 30 minutes before slicing.
