Ingredients

  • 1 lb breakfast sausage
  • 3 cups frozen diced hash brown potatoes
  • 10 eggs, beaten with 1/4 cup milk and 1/2 tsp salt
  • 2 cups shredded cheddar or pepper jack
  • 8 large flour tortillas
  • Salsa to serve

Steps

  1. Brown the sausage in a large skillet. Set aside.
  2. Cook the potatoes in the fat until crisp, about 10 minutes.
  3. Lower the heat and scramble the eggs gently until just set.
  4. Lay out the tortillas. Fill each with potatoes, sausage, eggs and cheese. Fold in the sides and roll tight.
  5. Cool completely, then wrap each in foil or plastic and freeze.
  6. To reheat, unwrap, wrap in a damp paper towel, and microwave 2 to 2 1/2 minutes, turning once.

TipLetting the filling cool before rolling keeps the tortillas from getting soggy.
