Ingredients

  • 1 medium red cabbage (about 2 1/2 lb), cored and thinly sliced
  • 2 tbsp butter
  • 1 onion, thinly sliced
  • 2 tart apples, peeled and grated
  • 1/3 cup apple cider vinegar
  • 1/3 cup packed brown sugar
  • 1/2 cup water or apple juice
  • 1 bay leaf
  • 3 whole cloves
  • 1/4 tsp ground cinnamon
  • 1 tsp salt
  • 2 tbsp red currant jelly (optional)

Steps

  1. Melt the butter in a Dutch oven over medium heat and cook the onion until soft, 5 minutes.
  2. Add the cabbage, apples, vinegar, brown sugar, water, bay leaf, cloves, cinnamon and salt. Toss well.
  3. Cover and simmer gently, stirring every 15 minutes, until the cabbage is very tender, 50 to 60 minutes. Add a splash of water if the pot gets dry. (Or cook it on low in a slow cooker for 6 hours.)
  4. Remove the bay leaf and cloves. Stir in the jelly and cook uncovered a few minutes until the liquid is glossy.
  5. Taste and balance with more vinegar or sugar. Serve warm.

TipIt tastes even better made a day ahead; reheat gently with a spoonful of water.
