Ingredients

  • 1 whole camembert (about 9 oz) in a wooden box
  • 1 small clove garlic, thinly sliced
  • 2 sprigs thyme or rosemary
  • 1 tbsp olive oil
  • 2 tbsp honey
  • pinch of flaky salt and black pepper
  • toasted baguette or sourdough slices, to serve
  • fruit chutney or fig jam, to serve

Steps

  1. Heat the oven to 400°F. Unwrap the cheese, discard any plastic or paper, and return it to the bottom of its wooden box.
  2. Score a crosshatch in the top rind with a sharp knife. Poke the garlic slices and small pieces of thyme into the cuts and drizzle with the oil.
  3. Set the box on a sheet pan and bake 15 to 20 minutes, until the center feels very soft and wobbly when pressed.
  4. Drizzle with honey, sprinkle with flaky salt and pepper, and serve right away with toast and chutney.

TipIf your cheese didn't come in a wooden box, bake it in a small ovenproof dish that fits it snugly so it doesn't spread.
