Ingredients

  • 2 thick slices sourdough or whole-grain bread
  • 1 ripe avocado
  • 2 tsp lemon or lime juice
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 2 large eggs
  • flaky salt, black pepper and red pepper flakes
  • microgreens or chopped chives (optional)

Steps

  1. Toast the bread until deeply golden.
  2. Mash the avocado with the lemon juice and salt, leaving it a little chunky.
  3. Heat the oil in a nonstick skillet over medium-high heat. Crack in the eggs and fry until the whites are set with crisp edges and the yolks are still runny, 2 to 3 minutes, spooning a little hot oil over the whites.
  4. Spread the avocado thickly on the toast, top each with an egg, and finish with flaky salt, pepper, chili flakes and greens.

TipDrizzle a little olive oil on the toast before the avocado; it keeps the bread crisp under the topping.
