Ingredients

  • 2 apples, peeled and diced
  • 1/3 cup brown sugar and 1 tsp cinnamon
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder, 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 tsp vanilla
  • Glaze: 1 cup powdered sugar and 2 to 3 tbsp milk

Steps

  1. Heat the oven to 350°F and grease a 9x5-inch loaf pan.
  2. Toss the apples with the brown sugar and cinnamon.
  3. Beat the butter and sugar until fluffy. Beat in the eggs and vanilla.
  4. Stir in the flour, baking powder and salt alternately with the milk.
  5. Spread half the batter in the pan, add half the apples, then the rest of the batter and apples. Swirl with a knife.
  6. Bake 50 to 55 minutes until a toothpick comes out clean. Cool 20 minutes, then drizzle with the glaze.

TipTart apples like Granny Smith keep their shape best.
