Ingredients

  • 1 lb Velveeta (or other processed American cheese), cubed
  • 1 (10 oz) can Rotel diced tomatoes with green chiles, undrained
  • 1/2 cup milk, plus more as needed
  • 1/2 lb cooked, drained breakfast sausage or ground beef (optional)
  • 1/2 tsp ground cumin
  • tortilla chips, to serve

Steps

  1. Put the cheese, Rotel, milk and cumin in a saucepan over medium-low heat.
  2. Stir often until melted and smooth, about 10 minutes. Thin with more milk if needed.
  3. Stir in the cooked meat if using.
  4. Serve warm with chips. Keep it on low in a small slow cooker for parties.

TipWant to skip processed cheese? Melt 1 lb shredded white American from the deli counter with the milk instead; it stays just as smooth.
