Ingredients

  • 2 tbsp olive oil
  • 2 medium sweet potatoes (about 1 1/2 lb), peeled and cut into 1/2-inch cubes
  • 1/2 lb breakfast sausage or chicken sausage
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt and 1/4 tsp black pepper
  • 4 large eggs
  • sliced green onions, to serve

Steps

  1. Brown the sausage in a 12-inch skillet over medium heat, breaking it up, about 6 minutes. Move it to a plate.
  2. Add the oil and sweet potatoes to the skillet. Cover and cook, stirring every few minutes, until nearly tender, about 10 minutes.
  3. Uncover, add the onion, pepper, paprika, salt and pepper, and cook until the potatoes are browned and tender, 6 to 8 minutes more.
  4. Stir the sausage back in. Make 4 wells, crack in the eggs, cover and cook until the whites are set, 4 to 6 minutes.
  5. Top with green onions and serve.

TipFor a meatless version, skip the sausage and add a can of drained black beans with the peppers.
