Ingredients

  • 2 lb boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 2 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne (optional)
  • 1 1/2 tsp salt
  • 1 (15 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 3/4 cup heavy cream or full-fat coconut milk
  • chopped cilantro, basmati rice and naan, to serve

Steps

  1. Put the chicken, onion, garlic, ginger, spices and salt in the slow cooker and toss to coat.
  2. Stir in the tomato sauce and tomato paste.
  3. Cover and cook on low for 4 to 5 hours or high for 2 1/2 to 3 hours, until the chicken is tender.
  4. Stir in the cream and cook 15 minutes more. Taste for salt.
  5. Serve over rice with cilantro and naan.

TipFor more flavor, marinate the chicken in 1/2 cup plain yogurt with half the spices for a few hours first.
