Ingredients

  • 1 1/2 cups fresh pumpkin seeds (from 1 medium carving pumpkin)
  • 1 tbsp melted butter or olive oil
  • 3/4 tsp salt
  • 1/2 tsp smoked paprika or garlic powder (optional)

Steps

  1. Heat the oven to 300°F.
  2. Rinse the seeds in a colander and pull off the stringy pulp. Pat them very dry with a towel.
  3. Toss with the butter, salt and seasoning and spread in a single layer on a baking sheet.
  4. Roast 20 to 30 minutes, stirring every 10 minutes, until golden and crisp.
  5. Cool on the pan; they crisp more as they cool.

TipFor a sweet batch, toss with melted butter, 1 tbsp sugar and 1/2 tsp cinnamon instead.
