Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1 3/4 cups buttermilk
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/3 cup melted butter, plus more for the iron
  • 1 tsp vanilla extract

Steps

  1. Heat the waffle iron. Whisk the flour, brown sugar, baking powder, baking soda, salt and spice in a large bowl.
  2. In another bowl whisk the buttermilk, pumpkin, eggs, melted butter and vanilla.
  3. Pour the wet ingredients into the dry and stir just until no dry flour shows. A few lumps are fine.
  4. Brush the iron with butter and cook about 2/3 cup batter per waffle (depending on your iron) until deep golden and crisp, 4 to 5 minutes.
  5. Keep finished waffles on a rack in a 200°F oven while you cook the rest.

TipFreeze extra waffles in a single layer, then bag them. Reheat straight from frozen in the toaster.
