A buttery shortbread crust under a gooey, caramel-like pecan filling. Easier to serve to a crowd than a whole pie.

Ingredients

  • For the crust: 2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 tsp salt
  • 3/4 cup (1 1/2 sticks) cold butter, cubed
  • For the filling: 3 large eggs
  • 1 cup light corn syrup
  • 3/4 cup packed brown sugar
  • 4 tbsp melted butter
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 1/2 cups chopped pecans

Steps

  1. Heat the oven to 350°F. Line a 9x13-inch pan with parchment, leaving overhang.
  2. Pulse the flour, brown sugar and salt with the butter in a food processor (or rub in by hand) until crumbly. Press firmly into the pan and bake 18 to 20 minutes, until lightly golden.
  3. Whisk the eggs, corn syrup, brown sugar, melted butter, vanilla and salt. Stir in the pecans.
  4. Pour over the warm crust and bake 25 to 30 minutes, until the filling is set and barely jiggles in the center.
  5. Cool completely, then chill 1 hour before lifting out and cutting into bars.

TipUse a sharp knife wiped clean between cuts for neat squares.
