Ingredients

  • 2 cups milk (whole or oat)
  • 3 tbsp canned pumpkin puree
  • 2 tbsp maple syrup or brown sugar
  • 1 tsp pumpkin pie spice, plus more to dust
  • 1 tsp vanilla extract
  • 1/2 cup hot espresso or 1 cup strong brewed coffee
  • whipped cream (optional)

Steps

  1. In a saucepan over medium heat, whisk the milk, pumpkin, maple syrup and spice until steaming, about 5 minutes. Do not boil.
  2. Remove from heat and whisk in the vanilla. For foam, blend with an immersion blender or a frother for 20 seconds.
  3. Divide the espresso between two mugs and pour in the pumpkin milk.
  4. Top with whipped cream and a pinch of spice.

TipMake a jar of the pumpkin-maple-spice base and keep it 5 days in the fridge; use 2 heaping tbsp per mug.
