Ingredients

  • 2 cups water
  • 1 (2-inch) piece fresh ginger, sliced
  • 2 cinnamon sticks
  • 8 green cardamom pods, lightly crushed
  • 6 whole cloves
  • 8 black peppercorns
  • 4 bags black tea (or 4 tsp loose Assam)
  • 2 cups whole milk
  • 3 to 4 tbsp sugar or honey

Steps

  1. Bring the water, ginger and spices to a boil in a saucepan. Lower the heat and simmer 10 minutes.
  2. Add the tea and simmer 2 minutes.
  3. Add the milk and sugar and heat until just steaming, 2 to 3 minutes.
  4. Strain into mugs. Froth with a frother if you like.

TipMake a double batch of the spiced tea (steps 1 and 2), strain and refrigerate. Mix half and half with hot milk for quick lattes.
