Ingredients

  • 2 acorn squash
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt
  • pinch of cayenne (optional)

Steps

  1. Heat the oven to 400°F. Cut the squash in half from stem to tip and scoop out the seeds.
  2. Score the flesh in a crosshatch pattern without cutting through the skin. Set cut side up on a baking sheet.
  3. Put 1/2 tbsp butter and 1/2 tbsp brown sugar in each cavity. Sprinkle with cinnamon, salt and cayenne.
  4. Roast 45 to 55 minutes, brushing the melted butter over the flesh halfway, until fork-tender and browned at the edges.

TipMicrowave the whole squash for 2 minutes first if it is hard to cut.
