Ingredients

  • 2 large sweet potatoes (about 2 lb), cut into 1/4-inch sticks
  • 1 tbsp cornstarch
  • 3 tbsp olive or avocado oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 3/4 tsp salt

Steps

  1. Heat the oven to 425°F with racks in the upper and lower thirds. Line two baking sheets with parchment.
  2. Soak the cut potatoes in cold water 30 minutes if you have time, then dry them very well.
  3. Toss with the cornstarch until lightly coated, then with the oil and spices (hold the salt).
  4. Spread in a single layer with space between the fries. Bake 15 minutes, flip, swap the pans, and bake 10 to 15 minutes more until crisp at the edges.
  5. Salt right away and serve hot.

TipTwo pans matter. Crowded fries steam and go soft.
