Ingredients

  • 2 cups apple cider, reduced to 2/3 cup (see step 1)
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup buttermilk or milk
  • For the coating: 1/2 cup sugar, 1 tbsp cinnamon, 4 tbsp melted butter

Steps

  1. Boil the cider in a saucepan until reduced to 2/3 cup, about 20 minutes. Let it cool.
  2. Heat the oven to 350°F and grease two 6-cavity donut pans.
  3. Whisk the flour, baking powder, baking soda, spices and salt. In another bowl whisk the sugars, eggs, melted butter, buttermilk and reduced cider.
  4. Stir the wet into the dry until just combined. Pipe or spoon the batter into the pans about 3/4 full.
  5. Bake 10 to 12 minutes, until a toothpick comes out clean. Cool 5 minutes, then brush with melted butter and roll in cinnamon sugar.

TipNo donut pan? Bake the batter in a greased muffin tin for 15 to 18 minutes.
